Vac-sealed-froze with seasoning. Did one dark and one light portion sous-vide, 152 – 6 hrs for dark, 3 for light. Juices in bags for gravy. Had dressing made with stock from the carcasses made in pressure cooker when I cut up the birds for freezing. Green bean casserole, cranberry sauce, mashed potatoes, pumpkin pie. We got stuffed and left overs for the coming week.

Not made into anything else; just a lovely repeat of yesterday (we have leftovers of everything). But…without the time and stress. I often look forward more to the day after Thanksgiving. Low key (I have never done Black Friday, and never will), low stress, same great food, just reheated.
